Texas Style Pork Carnitas

3-5 lbs pork sear with 1 tbs olive oil
add to it 1 onion, 1 tbs fresh garlic, 1 tbs cumin, salt and pepper, 1 fresh lime (squeezed) and 1 drop Lime Essential Oil, Cilantro leaves chopped and 1 drop Cilantro Essential oil, 1 orange (sqeezed), 3 bay leaves, oregano (fresh, dried or 1 drop Oregano Essential Oil) 2 cups chicken broth or 2 tsp chicken bullion and 2 cups water.
You can either smoke meat in smoker or use 1-2 tsp liquid smoke in above mixture.
for sweeter pork add some brown sugar.

cook in oven or crock pot for 4-6 hours

serve with tortillas or chips, lettuce, cheese. Carnitas on salad is awesome!

Chile Verde!

3-5 lbs Pork cut into 2 inch by 1 inch pieces. Dredge in flour, salt, pepper, . Fried in 2 tbs olive oil. put in crock pot or pot for oven

garlic, onions, celery, bell pepper, any pepper. saute in pork drippings.
put with pork
add
1 large can Green chile enchilada sauce
1 small can green chiles
1/2 to 1 jar herdez salsa verde
1 cup chicken stock or 1 tsp chicken bullion and 1 cup water
cumin, bay leaf, salt, pepper, oregano fresh, dried or oil (i used 1 drop Oregano Essential oil)

cook for 4 to 6 hours.
serve with tortillas or chips

Smoked Spare Ribs

I was thinking about ribs. Being from the south we smoke a lot of meats around here. I have a great recipe for ribs. You can smoke em on a smoker or cook them in the oven.  Or better yet- call Christian and bribe him to smoke ya some!
1-2 rack Spare ribs or baby back rinsed (we like spare cause they have more meat) or even a pork roast or country style (boneless) pork ribs are awesome this way!
Rub (mix all together):
1 cup brown sugar
1 tbs lemon pepper
1 tbs garlic powder
1/2 tbs sea salt (redmonds dirt lookin kind)
1/2 tbs onion powder
1 tsp celery salt
2 tsp tony chachere's creole seasoning
cover with yellow mustard
sprinkle with 1 tbs liquid smoke. (by the ketchup on top shelf in walmart)
put Rub all over ribs. You want to coat it good. garnish with onions and/or celery. use roasting pan or cookie sheet covered in tin foil or wrap tightly in foil so no steam can escape. place on cookie sheet and bake on 250 degrees for 4 to 5 hours. These are fall off the bone yummy!
